Hey y’all! It’s been a long time since I’ve participated in a blog hop, but this one…yeah. I mean, c’mon now, the Grand Prize is a Kitchen-Aid Stand Mixer!

Do you have one? Have you ever used one? I’m on my 3rd one. The reason being is that I’ve upgraded each time and given my previous ones to up and coming bakers. I bought my first one close to 15 years ago when I took cake decorating classes. I fell in love the first time I used it and I can’t seem to live without one now. Between that and my coffee makers… I’d be hard pressed to choose. Seriously. Might have to pry both out of my cold, dead arms.

But, since that hopefully is not something I’ll have to worry about, we’ll stick with how much I love mine and how lucky someone is going to be to win the one being offered as the Grand Prize of the Mix Up Some Romance Blog Hop. And since it’s a mixer, I thought I’d share a recipe or two that I’ve made in mine. I have made everything from sausage balls and meatloaf mix to breads and cinnamon rolls to cakes and cookies to frostings.

Given the time of year and some of us have started planning our holiday baking (I know, that word holiday is evil still… I’ll only say it those two times I promise), the recipe I’ll share with you is one that is featured in the back of my book, Stick Shift. The hero in it was taught by his mother to make cookies and his favorite which happen to also be the heroine’s favorite are Molasses Cookies…

Cam’s Molasses Cookies

Ingredients:

1-1/2 cups unsalted butter, softened

2 cups sugar

2 large eggs

1/2 cup molasses

4-1/2 cups all-purpose flour

4 teaspoons ground ginger

2 teaspoons baking soda

1-1/2 teaspoons ground cinnamon

1 teaspoon ground cloves

1/4 teaspoon salt

3/4 cup coarse decorating sugar

Directions:

Preheat oven to 350°.

 In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and molasses.

Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. Shape into 2-inch balls (ice cream/cookie scoops work well here) and roll in coarse sugar. Place 2-1/2-inches apart on ungreased baking sheets (I usually use parchment paper or non-stick aluminum foil). Bake 13-15 minutes or until tops are cracked. Remove to wire racks to cool.

Yield: 2 dozen.

These are delicious cookies and they’re soft and chewy. And with a cup of coffee, they’re just YUM!
